I have truly had some fun filled last couple of days. Lets get to it! Okay so I tried to get Mini A (my baby boy) to try one of those food packs that the toddlers suck through a straw like a beverage but it's really food (crazy right) weeelllll my son was not having it...lol! He played with my emotions a little like he was going to eat it then he'll smile and reject it at every turn. So I'm like okay I'm a boss I got this cause I refuse to let a 8 month old make me cry! Like a champ I decided to take...
on the magnanimous task of first cooking then blending all his meals....because my son will not eat anything that is not the consistency of slop.. Thinking i could handle it I began with breakfast:
Organic Steel Cut Oats
Organic Mango and Bananas
First I cooked the oatmeal (Steel cut oats, organic milk, and dash of salt) while the oatmeal cooled I used that time to cut up the fruit. When all the ingredients were completely prepared I folded everything (the oatmeal and fruit) into the blender and blended that thing to kingdom come. When I completed blending it, it looked great. However I had to wait for the final verdict from the mini guy...
He cleaned his bowl yall!!!! The oatmeal was a hit.!
Encouraged I moved on to supper. I chose to create some fresh chicken broth with veggies: bok choy, celery, bell pepper, garlic, carrots, and lastly collard greens.
I was in that kitchen dicing and slicing, man I was going in! Yall I literally felt like supermom. There I was cooking healthy food for my baby so that he could eat well and live long in it felt so good.
I was in such a good mood I decided to go ahead and cook dinner (will share later). When the soup concoction I made was ready I blended the portion I reserved for Mini A. Ready to feed him I was excited to see if he would eat the veggies just as he ate his breakfast.. Although it looked disgusting I thought it tasted good. He did eat it but after about four spoonfuls he refused to eat anymore. Needless to share the blended veggies and chicken was a fail.
Now for dinner I cooked rice, fried some chicken, and baked some cornbread muffins.
The cornbread muffins were an absolute fail! I used all purpose flour so I believe the problem was to much baking powder.
Not only was the chicken beautifully fried :-) it was also delicious to boot!
Although I am happy with my progress for now Martha will keep her throne because I AM NOT READY!!!!
